Lee Murdoch has been appointed executive chef at Seaton House in St Andrews, succeeding Mark Drummond, who held the role since December last year. Murdoch will collaborate closely with Roy Brett, chef founder of the Ondine Oyster & Grill restaurant and head of culinary for the UK and Europe at Valor Hospitality, the group managing the 42-bedroom hotel.
Before joining Seaton House, Murdoch played a key role in launching the 140-cover steakhouse Coal Shed in Brighton in October 2024. His extensive career includes senior culinary positions in the UK, Asia, and the Middle East, with experience at Trump Turnberry in Scotland. He is also a recipient of the Royal Academy of Culinary Arts Award for Excellence.
As executive chef, Murdoch will lead the hotel's food and beverage services, encompassing the Board Room, Bow Butts Bar, and Ondine Oyster & Grill.
